If the sugar was used up within 10 days time, should I increase the amount when I bottle it? You said the sour taste was from the used up sugars. I used 2 cups on my 1st bottle, the next 3 have 1 Cup, and the last 2 1 1/2 cups. Just trying to get a set recipe without sourness and plenty of alcohol ...

That means all the sugars are getting used up. Put it in the fridge. Once its mostly clarified (and still cold), back sweeten it to taste.

Yes, very fizzy. I also tasted them unclarified. The bottles are rock solid and fermenting. I notice that the yeast is on the bottom of the bottles. I started my 1st bottle on 9/29, and 3 bottles on 10/3. I sampled the 1st bottle 2 days ago, very dry, and cannot notice any alcohol. That is unusual- usually once the beverage is cold it will not overflow like you described.

After you removed the EZ Caps, did you replace it with a normal cap or put the EZ Cap back on?
