That recipe sounds awesome. I've found that fermenting honey is tricky- sometimes it ferments really quickly and sometimes it is painfully slow. I guess it depends on the bees. Boiling it like you said should help- that way the naturally occuring yeast in the honey won't be competing against the EZ ...

It tends to ferment quickly. I usually add extra sugar so it doesn't come out too dry.
