Re: Dry Cider

I generally drink my cider after three or four days of fermentation. It's very good, but sweeter than the excellent ciders I've drunk in the Asturias region of Spain. I'd like to make a drier cider, but not one with a much higher alcohol content. What steps should I take? Longer fermentation? Less ...

Re: cleaning E-Z caps, bottle sterilization

I'm assuming EZ caps are fairly durable, but if I was to wash them before use, or for storing, would this cause them to degrade or anything of that nature? And another first use question...as is noted everywhere, one doesn't need to worry about about cleaning the bottle between uses as the alcohol ...

Re: Muscadine Wine

Had a bumper crop this year (several buckets full) of muscadine grapes - Ison variety (dark purple/black). Wanted to try and make some wine along with the usual jelly. Read where storing them in the freezer first helps breakdown the fibers and juice better - not to mention the storage issue for so ...

Re: Using 48 Hour Turbo

Snowball wrote:thanks for the quick reply.
I'm only making Kilju, so flavor is not important.

During testing the 48 hour turbo finished in the EZ Capped bottles in under 24 hours with some finishing in about 12 hours, so don't be surprised if it goes a lot faster than you expected.

Re: Using 48 Hour Turbo

Hi, I have a pack of 48 hour turbo. Instructions say do not use an airlock. Suppsedly this yeast acts so fast it would blow water out of an airlock anyone with experience using turbo on ezcaps ? thanks, Ron. We've used 48 hour turbo to test the caps. The caps do just fine. However the 48 hour turbo...

Re: Hard lemonade question

I went ahead and did all 4 bottles yesterday (I also went an bought some pear juice). They all seem to be working fine. The caps are all puffed and split in the middle and the bottles are pressured. The only one that seems to foam on the top is the lemonade one, but the cap is split and all. So, I ...

Re: Tasting your beverage

I had a question about tasting or adding yeast to your beverage. I've seen that everyone says to taste your beverage to see if it is where you want it before you put it in the fridge but how exactly do you do that? I thought if you opened the bottle while it was fermenting, it ruined the process an...

Re: Hard lemonade question

I went to the store today to buy different juices in preparation for my ez caps that I should get on Thursday. I had been reading up on this forum and I read that lemonade was hard to ferment because of the preservatives. At the store today I came across a cheap (3 for $5) bottle of lemonade that s...

Re: Easy / Awesome dark beer!

When I made this recipe before, since it was a test recipe I only made 2 liters. I just made it again, a full gallon. This time I'm going to try to inject nitrogen into the beer for a "true" Guiness style complete with creamy head using a seltzer bottle with a nitrogen charger in place of...
