I've been making batches of apfelwein - which is actually what the EZ-Caps recipe is, because traditional English or American-style cider doesn't add additional sugars to the apple juice. I find that this recipe produces a rather dry wine, because it's hard to stop fermentation. What's amazing is that the wine smells exactly like Welch's grape juice, but it loses the sweet character.
